Though you can get by with a 1.2GHz Processor with 1.5GB of DRAM (not shared with VRAM), I'd suggest a minimum of 1.8GHz x2 CPU with 4GB of DRAM, or at least 2GB DRAM with no shared.
You would get a much more powerful laptop by buying a Dell or HP for the same price. I don't really see the point of buying a MacBook to run Vista on. It's not a particularly good value for the price, considering the other laptops on the market. Also you would still have to buy a copy of Vista, which adds another $100 on to the price of the already overpriced MacBook.

My recommendations are for Vista are as follows:

Budget Office/Email PC:
Modern Intel/AMD CPU @ about1.8Ghz or higher
1GB of RAM
Newer onboard chip that supports Aero or lowend discrete video card

Mainstream Multimedia/Light Gaming PC:
Dual Core Intel/AMD CPU @ about 2Ghz or higher
2GB of RAM
discrete video card, 8600GT or better

Serious Gaming PC:
Dual or Quad Core Intel/AMD CPU @ 2.4Ghz +
4GB of ram
8800GT or better

With Vista, the most important thing is memory. I would not ever want run Vista with less than 1GB of memory. Most people will find 2GB enough for Vista, but anyone who plays modern games on their PC multiple times a week will want 4GB of ram.
